Day 33: The Buzz-Mail Bag — What Is "Raw" Honey (and What’s That White Foam on Top)?

From My Nephew: "What actually makes honey 'raw'?"
It sounds like a simple question, but the answer touches on everything from how honey is harvested to what you see sitting right at the top of your jar!
So, What Is "Raw" Honey?
In short, raw honey is honey in its purest form—exactly as the bees made it inside the hive. It is taken straight from the honeycomb, strained to catch large pieces of wax, and bottled. It is never heated to high temperatures (pasteurized) and never ultra-filtered under pressure to strip out its natural goodness.
Because raw honey is completely unprocessed, it retains all of its natural enzymes, beneficial antioxidants, micro-propolis, and local pollen grains.
🎓 Bee School: Understanding "Honey Foam"
If you’ve ever looked closely at a jar of true raw honey, you might notice a soft, light-colored, frothy layer sitting right at the top of the jar under the lid.
Some people wonder if it's a flaw, but in reality, experienced honey lovers consider it a badge of honor! Here is what’s actually happening inside the jar:
Micro-Bubbles: During extraction and bottling, tiny air bubbles get trapped in the honey. Because honey is so dense, these bubbles slowly float upward over several days.
Natural Goodness: As those bubbles rise to the neck of the jar, they bring along microscopic specks of natural beeswax, propolis, and raw pollen.
The Result: They form a delicate, delicious "honey foam" at the top! It’s completely safe, edible, and tastes like a light, airy honey candy.
Commercial honeys bought in grocery stores are often boiled and fine-filtered (pasteurized) under intense pressure to stop foam from forming and keep it liquid forever. But if you ever see that soft white ring in your Sugar Camp jar, you know you’re getting 100% authentic, untouched honey straight from our Fort Atkinson hives!
